In the 18th century, Catalan entrepreneurs introduced the Berkey method to Galicia, refining the salting process and contributing to the growth of numerous curing factories along the coast. For decades, men and women worked at every stage of production, from the arrival of the catch at the harbour to its preparation, pressing, and distribution.
Today, although these traditional practices have largely disappeared, their legacy remains alive in the landscape, culture, and collective memory of Muros.
